Special Tips from Lee on Catering your big event..Your Wedding...

"It seems you can't plan a wedding without getting around to thoughts of food.   Should you have a "cake and punch" reception?  Should you have just appetizers with cocktails?  What about buffet or plated service?  So many options!

In the end, the decision never changes:  budget.  An ugly word, but one that tends to rule the wedding.

If you're trying to be frugal and can't offer your guests a full dinner, then by all means, consider appetizers with a beverage.  A pretty buffet of appetizers that guests serve to themselves, is extremely cost effective (as long as you don't offer shrimp, for example -- or another somewhat expensive base item).   If you are serving appetizers, guests should know that they aren't grazing for dinner.  Bulk items tend to cost less, and give you the opportunity to offer a wider selection.  Know that passed finger foods are also an option, but will cost more for wait staff.

Keep in mind, too, your venue.  An outdoor venue in August (which should be illegal in most states) does not bode well for eggs, mayonnaise or foods that require refrigeration.

Finger foods also give your guests something to "do" while you're getting those after-ceremony photos taken.  You won't lose guests if they're occupied with food and drink. Don't worry about missing all the goodies -- if you're using a Sweetheart Table, simply ask the servers to prepare a plate for the two of you to share once you've been introduced, etc.

A good caterer can work with you to find dishes appropriate to your budget, your taste, and your guests."
